Herb Butter Roasted Chicken


  • (1) 4-5lb whole roasting chicken from R Heritage Farm
  • ¼ cup softened butter
  • 1 tsp crushed rosemary leaves
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 tbsp fresh parsley
  • 1 tsp minced fresh garlic

Heat your oven to 350 degrees. Secure wings to the body of the chicken using string.

In a small bowl stir together all the ingredients and rub over the chicken. Place in a roasting pan and bake until meat reaches 165 °F and juices run clear. (approx. 2-2 ½ hours)

Serve this with some homemade mashed potatoes (yum!), and gravy made from the chicken drippings, and you've got yourself a wonderful old fashioned meal!
